Rosé Sparkling Wine Brut
This sparkling wine, produced by the long version of the Charmat Method, is a blend of Merlot and Chardonnay grown in the estate vineyards in the Montello area. It appears a seductive, luminous rose-pink and exhibits a long-lingering, slender bead. The nose releases rich fragrances of wild red berryfruit alongside rose petals, fresh-baked bread, and yeastiness. The palate shows a pronounced, crisp acidity with full flavours, then a dry, lengthy finish, making for a deliciously enjoyable wine.
It is a sparkling wine made with Charmat method, obtained by a blending of selected Merlot grapes (subjected to thinning out) and Chardonnay grapes harvested only from estate vineyards.
After the harvest that takes place in October, the Merlot grapes are left by a gentle pressing in contact with their skins for a short time.
As soon as the desired colour is reached, the juice released from the skins is subjected to a partial fermentation in steel vats under controlled temperature at 18° C.
The partial fermentation takes place when the must’s high sugar degree, thanks to the thinning out, allows to obtain a more elegant and delicate wine.
by the foaming in closed steel vats, The cuvee is then prepared with some Chardonnay wine (70%) for the second fermentation with Charmat method in closed steel vats for approximately three months.
The final result is a sparkling wine brilliant pink in colour, with a thin and persistent perlage.
It has a good intensity on the nose, featuring small red berries perfumes accompanied by floral notes of rose, bread crust and leaven flavours.
The taste is fresh, the foam is creamy with a good acidity, savoury in the palate, easy and nice to drink, leaving a dry and persistent final aftertaste.
It is recommended as aperitif or to be matched with various dishes, starting from first courses, grilled vegetables, white meats or fish dishes.
